INGREDIENTS

#1 Veggie Stir Fry Noodles

1 bell pepper
1 leek
1 inch piece of ginger
1 tsp oil
1 head of broccoli
a handful of cashews
125 g mie noodles, vegan (4.4 oz)
(check the ingredients, not all mie noodles are plant based)

for the sauce:
2 tbsp soy sauce
1 tbsp maple syrup
1 tbsp sweet chili sauce
3 tbsp water
1 tbsp lemon juice

feel free to add more sauce
----
sesame seeds, greens etc
*serves 2

#2 Baked Sweet Potato with Yogurt Dressing

1 sweet potato, roasted in the oven for 50 min- 1 hour (190C)
cherry tomatoes
baby spinach
lime juice
---
dressing: 2-3 tbsp plain vegan yogurt, 1 tbsp white wine vinegar, spices of choice, salt, pepper to taste
*serves 1

#3 Savory Crepes with Avocado + Tofu

for the batter:

180g spelt or all purpose flour ( 1 1/3 cup + 1 tbsp OR 6,3 oz)
2 tbsp cornstarch or tapioca starch
1 tsp baking powder
½ tsp salt, more if needed
1 1/2 cups water (375ml)
1 tsp apple cider vinegar
1 tsp dried herbs
pepper to taste
1 tsp hemp powder, optional

1 tsp coconut oil (for greasing the pan every once in a while)

topping ideas: avocado, lemon juice , cherry tomatoes, smoked tofu, salt, pepper

*serves 3-4
