Home Made Hot Dogs using 32mm casings

1 lb lean pork
3 lbs beef
1 lb chicken
1 tbs onion powder
1 tbs garlic
1 tbs coriander, finely ground
1⁄4 teaspoon dried marjoram
1⁄4 teaspoon ground mace
1⁄2 teaspoon ground mustard
1 teaspoon sweet paprika
1 teaspoon white pepper, freshly fine
1 1⁄2 teaspoons sugar
salt to taste fry up a sample
and cure for the amount of lbs your using about 1 tsp per 5 lbs of meat
