*Eggs Benedict*
Ingredients for the Hollandaise Sauce
3 egg yolk
1 tsp dijon mustard
1 tbsp lemon juice
1 tsp cayenne pepper
pinched of salt
1/2 cup of melted unsalted butter

4 Brioche or English muffin (split)
4 slices of Ham
Salad
4 Poached eggs
Chopped chives

-Fill the sauce pan with about an inch of water.
-In a glass bowl, combine egg yolks, lemon juice, dijon mustard, salt and cayenne pepper.
-Cook the mixture to the sauce pan, whisking constantly,
-Reduce heat to very low and very slowly add the butter while whisking constantly
-Remove form heat and set aside
-Warm the brioche or English muffin
-Assemble the eggs benedict
-Top the brioche buns with salad, ham and poached eggs
-Drizzle with hollandaise sauce on top
-Garnish with chopped shives
-Enjoy!


*Carrot Cake Recipe*

Ingredients:
- 300g shredded carrots, 4 eggs, 300g of brown sugar, 1 tsp vanilla extract, 200 ml vegetable oil, 250g flour, 2 tsp baking soda, 2 tsp cinnamon, 1/2 tsp salt.
Cream cheese frosting:
_ 115g butter, 200g of cream cheese and 375 powdered sugar
Instructions:
- Preheat the oven to 340F
-Make sure that all the ingredients are at room temperature
-Shred the carrots and mix sugar, eggs, oil and vanilla. Mix the ingredients well
- Add the dry ingredients, flour, baking soda, cinnamon and salt. Mix together well
- Divide the batter between 20cm line and greased cake pan and bake for 30-40 minutes.
-Cool the cakes in the pan for 10 mins before transferring to cool completely.
Cream cheese frosting
- While the carrot cake is cooling.
- In a stand mixer or a bowl, add the butter and beat in medium speed for 2-3 minutes.
- Add the cream cheese and beat for another 2 minutes.
-Add the sugar in thirds and mix well.
_ Place the frosting in the fridge for 30 minutes or when you're ready to decorate the cake.
