๐ป Join the community on Instagram: https://www.instagram.com/amandaducks/ ๐ป Join the community on Twitter: https://twitter.com/amanda_ducks MY ETHICAL & VEGAN APPAREL: https://apparelbyalma.com/ Monday: Avo Toast + allll the good stuff - 1/3 block of Organic Village adzuki bean tempeh, fried in olive oil and bbq sauce - 2 stems of broccolini, fried in olive oil and bbq sauce - 2 pieces of Oat Sourdough, toasted - 1/2 an avocado - a drizzle of home-made cashew sour cream (recipe below) Tuesday: BBQ Jackfruit Nachos - 1 packet of Amazonia Smoky BBQ Tender Jack, fried in olive oil - corn chips (as desired) Cashew Sour Cream: - 1 cup cashews (soaked) - 1/2 cup nutritional yeast - 1 clove of garlic - pinch of salt - pinch of pepper - 3/4 cup soy mylk Blend, pour and enjoy! Wednesday: BBQ Tempeh Sandwich - 1/2 block of Organic Village adzuki bean tempeh, fried in olive oil and bbq sauce - handful of kale, fried in olive oil and bbq sauce - 1/2 an avocado, sliced and mashed - 2 pieces of fresh sourdough bread - 1 tbsp of vegan chipotle mayo Thursday: Cherry Tomato + Parsley Pasta - 3 cloves of garlic - 1/2 punnet cherry tomatoes - small handful of parsley ^ all chopped and fried in olive oil - 1/2 packet of Barilla chickpea pasta, cooked - fresh parsley to serve Voila!
