HealthyEmmie.org Beth's Potato Pudding Recipe: Roast one japanese sweet potato until well done - the mushier the better. Once cooled, remove skin and put in a blender or food processor with a few tbsp of cocoa powder, and plant milk or water (or both!). How much liquid you need will depend on the size of potato.
