Fried crispy skin chicken - 2 chicken quarters - 1/2 tsp baking powder - 1 1/2 tsp brown sugar - 1 tsp soy sauce - 1/2 tsp salt - 1/2 tsp chinese five spice 1. Make the marinade, combine 1/2 a teaspoon of baking powder, 1 1/2 teaspoons of brown sugar, 1 teaspoon of soy sauce, 1/2 a teaspoon of salt and 1/2 a teaspoon of chinese five spice. Stir. 2. Rub the marinade on the chicken and let it marinate for 30 minutes. 3. After 30 minutes, preheat the air fryer at 190 degrees Celsius for 5 minutes. When the air fryer is done preheating, place the chicken quarters upside down in the basket of the air fryer and air fry for 5 minutes. 4. When the timer is up, flip the chicken over, reduce the heat to 160 degrees Celsius and continue to air fry for another 20 minutes. Once the timer is up, remove the chicken and let it rest for 5 minutes on a cooling rack. Notes: The five spice blend that I use is a very standard blend, a mixture of star anise, fennel seeds, Szechuan peppercorns, cloves and cinnamon. |
