#Chikarcholay #chikarchanay #Naanchanay Chikar Cholay Ingredients for Boiled Chanay: Soaked White Chickpeas (Safaid Chanay) 3 cups Water as required Salt 1 tsp Ingredients for Potato Chickpeas Paste: Boiled White chickpeas 1 cup Boiled potato 1 Water as required Ingredients for Chikar Cholay: Oil 1/4 cup Ginger Garlic Paste 1 tbsp Onion paste 1/2 cup Salt 1 tsp / to taste Red chili powder 1 tbsp Turmeric powder 1 tsp Black pepper powder 1 tsp Water 1/4 cup + 1/2 cup Potato chickpeas paste Cinnamon sticks 2-3 Black cardamom 2 Cumin powder 1 tbsp Coriander powder 1 tbsp Garam masala powder 1 tbsp Boiled white chickpeas 2 cups Yogurt 1 cup Reserved white chickpeas stocks 3 cups Green chilies (for garnishing) as required Onion rings (for garnishing) as required Directions for Boiled Chanay Preparation: 1. In a pot heat water and bring it to a boil. Add white chickpeas, salt and boil for 30-35 mins or until chickpeas are 80% done. Reserve the stock for later use. Directions for Potato Chickpeas Paste Preparation: 2. In a glass jar add boiled potato, boiled chickpeas, water and blend it well into paste. Set aside. Directions for Chikar Cholay Preparation: 3. In a pot heat oil and add ginger garlic paste. Cook for 30 seconds. 4. Add onion paste and cook for 2-3 mins. Add salt, red chili powder, turmeric powder, black pepper powder and mix it well. Add 1/4 cup of water and mix it again. 5. Add potato chickpeas paste and mix it well. Add 1/2 cup of water and cook for 2 mins. 6. Now add coriander powder, garam masala powder, cumin powder, black cardamom, cinnamon sticks and cook for 1-2 mins. 7. Now add boiled white chickpeas, yogurt and mix it well. 8. Add White chickpeas stock and cover and cook for 15-20 mins or until chickpeas are fully done. 9. Now dish it out, garnish with onion rings, green chilies and serve with naan.
