Do you call this dish Filipino Chicken Sotanghon, or Chicken Long Rice? This is a healthy and nutritious Filipino chicken soup that's especially delicious during cold weather!

This recipe isn't very soupy. We like to enjoy chicken sotanghon or chicken long rice with a lot more noodles than soup. If you'd like more soup, decrease the amount of noodles.

When I crave chicken noodle soup, I love making chicken sotanghon/chicken long rice because it only takes 15-20 minutes of active cooking.

The chicken thighs only take 10-15 minutes max to cook, and the bean thread noodles only take 5 minutes to cook. It may take longer to prep the ingredients longer than it takes to cook the sotanghon!

1 1/2 lb chicken thighs, sliced into small cubes
8 oz bean thread noodles (use only 4 oz for soupier sotanghon)
2-3 cups thinly sliced cabbage/napa cabbage
1/2 bell pepper, thinly sliced (or use carrots)
3-4 cloves garlic, minced
1 1/2 inch knob of ginger, peeled and sliced thinly
1/2 medium onion, chopped
7-8 cups of water
4 tsp chicken bouillon
3 tbsp fish sauce
1 tsp turmeric powder
2 tbsp oil
2 tsp salt, and more to taste
Freshly cracked black pepper to taste
