Before I was enlightened, I thought dry aged meat would taste like bad - I could not be more wrong. I visited the bossman and dry ageing specialist Junlong to explore how he performs the controlled rotting process, aka Dry Ageing, and also to conduct a not-so-surprising experiment by grilling a fresh steak with a dry aged one.
