Have you ever seen a rabbit wearing glasses? No? According to Dr. David Julian McClements it's because of how many carrots rabbits eat! In this talk, Dr. McClements shares with us how his research in food science could reverse the effects of diseases as we age. Dr. David Julian McClements is a Distinguished Professor at the Department of Food Science at the University of Massachusetts. His research uses the basic principles of physics, chemistry and biology to improve the quality, healthiness, safety and sustainability of the modern food supply McClements received his Ph.D. in Food Science (1989) at the University of Leeds (United Kingdom) in ultrasonic spectrometry. He then did Post-Doctoral Research at the University of Leeds, University of California (Davis) and University College Cork (Ireland). McClements is the sole author of three books, published over 1100 scientific papers, and is currently the most highly cited author in food science.
