I think Jazz is almost considered music theory turned into music by a lot of people, and mostly by people who don't actually play Jazz. That's, of course, not really true but at the same time it is really useful to learn some Music theory if you want to learn Jazz and it can really help you learn a lot faster and get much more out of the things that you practice and transcribe.
But it is also important that you go about it in the right way so that it does not become a weird set of rules that stops you from using your ears.
