• 2 eggs
• 10 g granulated sugar
• 150 g whole milk
• 150 g heavy/whipping cream
• 200 g chocolate (chips are fine)

*Directions*
1. Whisk the eggs and sugar together in a heat-safe bowl. Whisk in the milk and cream. Place the chocolate in a separate heat-safe bowl.

2. Over a pan of simmering water, whisk continually until the mixture reaches about 75˚ C (167˚ F).

3. While it's still hot, pour the mixture over the chocolate through a strainer. Allow to sit for a minute so the chocolate melts, then use a hand blender to emulsify.

4. Press a piece of plastic wrap directly on the surface and refrigerate until set. To speed this up, you can first pour the mixture into a shallow dish.
