Days are short but beautiful these days, and oh how much joy there is in witnessing the days beginning and waving goodbye to days end each time. I go out for nature walks often lately, even though waking up early in the morning and saying goodbye to my country cottage when it's still dark outside isn't my favourite thing. Mornings are misty and silent, ground covered in sparkling icy frost. I breathe deep and slow as I walk through frosted meadows and listen to the birds sing in trees.
Slow living truly brings so much joy. Easy vegan 5 ingredient cookie recipe: 1 cup of medjool dates 1 cup of oats 1 cup of walnuts or almonds or pecans 1 tablespoon of peanut butter A splash of milk I didn't really measure all the ingredients, but this is roughly how much I used. Blend everything together until you get a thick sticky mixture. Leave in the fridge for 20 minutes and then roll into balls. Press down with a fork and bake for 15 minutes at 180C.
