I find it helpful to plan each meal I am shopping for around starches. In this grocery haul, my starches consisted of unhulled oats, wild rice, frozen rice, sweet potatoes, red potatoes, and black beans. From these foods, my family was able to stay full all week eating meals like rice with beans and veggies, oatmeal, and potatoes with beans and steamed veggies. After I decided on my starches I was able to move on to the fresh & frozen fruits and veggies. For fruit, I found apples, red grapes, oranges, clementines, bananas, blueberries, and strawberries. These were for snacks, dessert, and flavorings. For veggies, I purchased tomatoes, cauliflower, broccoli, carrots, and mixed frozen veggies. Next, I included healthy fats like almonds & peanut butter. There were also important miscellaneous items to include in our whole food plant-based grocery haul, such as salt-free seasoning, plasticware, paper products, and snacks for the flight home. There are always compromises that need to be made when trying to eat healthy away from home. In this video I walk you through the specific compromises I had to make that did not follow my usual WFPB, SOS-free food choices. Commercial items like granola, crackers, peanut butter, and sparkling water each contained ingredients that I don't typically include in my family's diet due to their health implications. Unfortunately, while on vacation you just have to make the best of what is available to you.
