Now let’s talk about super foods, turmeric! Did you know turmeric is the spice that gives curry its yellow color? Turmeric is one of the most underrated super food in our African dishes, did you know we grow turmeric in Africa but hardly use it in our meals? Aside the fact the turmeric has a beautiful bright yellow color that gives meals a beautiful pop of color, it also has a lot of health benefits we should look into. This vegetable fried rice recipe tastes amazing with the blend of stir-fried vegetables, shrimps and to even make it better we tipped a table spoon of turmeric to kick it up a notch. Ingredients 3 cups long grain rice 100g shrimps 1 medium yellow onion 5 cloves of garlic, minced. 4 assorted bell peppers, diced. 1 large carrot, diced. 1 tbsp turmeric MAGGI Shrimp Tablet 1 tbsp Coconut oil *Alternative product based on availability in your country: MAGGI Star Cube or MAGGI Arome Tablet Preparatory Steps Bring 500ml of water to a boil, add rice, salt, stir and let cook for 20 minutes. Pour coconut oil into a wok over medium heat, add garlic, carrot, stir Add onion, stir then add shrimps, MAGGI shrimp tablet and stir-fry for 2 minutes. Add cooked rice, toss to mix well then add add assorted bell pepper, turmeric and toss till evenly coated. Adjust seasoning to your taste. Shrimps vegetable fried rice ready to serve! |
