This hot cross mug cake is an epic Easter fail! #shorts

Hot cross mug cake... without the cross! Epic fail? You decide...

Ingredients for a single mug cake:
4 Tbsp gf flour or plain flour/all purpose if not gf
1/4 tsp gf baking powder
1/4 tsp mixed spice
1/8 tsp ground cinnamon
1 pinch coarse salt
1 tsp brown sugar
3 Tbsp almond milk
1 tsp dried cranberries
1 tsp raisins
1/2 tsp vanilla extract
3 tsp orange marmalade
1 tsp vegan butter

Method
1. Add dried ingredients to a microwave-safe mug and stir well.
2. In a separate cup add the milk, dried fruit, 2 tsp marmalade and butter. 3. Heat the milk mixture in a microwave on high power for 30 seconds.
4. Stir the mixture to fully melt the butter and leave to cool for 2 minutes.
5. Add the vanilla to the milk and pour the milk into the mug of dried ingredients. Stir the batter with a fork, making sure you collect all the dried ingredients from the bottom of the mug.
6. Microwave on high power for 1 minute 20 seconds. My Microwave is 800 watts, you may need to adjust the timing or power setting to suit your microwave. The batter should be just set. Leave the cake to sit for 1 minute.
7. To make the marmalade glaze heat 1 tsp of marmalade in the microwave for 20-30 seconds until melted. Pour the glaze on top of the cake and spread it with the back of a spoon.
8. To make the icing whisk 3 Tbsp icing sugar/powdered sugar with a splash of milk to make a thick but pourable icing. Attempt to pour on the cake in the shape of a cross or forget that and pour over the whole cake.
