What I Eat In A Day/ 7 Ingredients Or Less/ WFPBNO

Today I am sharing another what I eat in a day. This time my recipes will be 7 ingredients or less and all recipes will be WFPB and of course no oil. Using recipes that only require a few ingredients makes it so easy to put meals together. The full recipes will be below.
Dr. Brook Goldners green smoothie recipe
You will need a high speed blender
Fill the carafe ¾ full of greens (spinach, kale, chard, cabbage, it can be one or all of them)
Pack it in the carafe. Using your fist pack it down and when it ¾ full you can add water up to the top of the greens.
Add ¼ to ½ cup ground flax or chia seeds
For the remaining 25 % add in 2-3 very ripe bananas and frozen fruit (pineapple, mango, berries )
Then blend till smooth.
Drink the whole carafe though out your day.

PUMPKIN PANCAKES
1 1/4 cup oat flour
1 T ground flax seed
2 tsp baking powder
1 tsp pumpkin pie spice
1/2 cup pumpkin puree
3/4 cup water.
Blueberries (optional)
1 tsp pure vanilla extract (optional)
Pre heat a non stick skillet or electric griddle @325 degrees.
Mix the dry ingredients first and then add in the wet and mix well,
use a 1/4 measuring cup to scoop up batter and pour onto your skillet or griddle. If you want to add a few blueberries now is the time. Cook pancakes until the edges get a bit dry and you see bubbles form. Flip and cook another 1-2 minutes on the other side. Serve with a bit of maple syrup and fruit.
Makes about 8 pancakes

SWEET POTATO AND PUMPKIN SOUP
1 medium onion chopped
2 celery stalks chopped
1 tsp salt
1 tsp. smoked paprika
1/4 to 1/2 tsp chili powder
3 cups peeled and chopped sweet potatoes (I used Japanese)
15 ounce can pumpkin
2 cups veggie broth
1 cup unsweetened plant milk
1 1/2 cup finely chopped kale or spinach
To a large pot add a bit of water or veggie broth
saute the onions and the celery for 5- 6 minutes until softened adding water as needed. Then cook until all the moisture is absorbed and onions caramelize a bit about 2-3 minutes Add 2 T of broth or water to deglaze the pot then add in the garlic and spices and cook for another minute then add in sweet potatoes, pumpkin, broth and plant milk. Stir well and bring to a boil and then simmer for 15 to 20 minutes or until potatoes are soft. Then puree soup with an immersion blender to regular blender then add in your greens stir well and let sit for five minutes before serving.
Makes about 4-6 servings.
