Step 2 Roughly chop Pumpkin, Onion and Ginger. Slice Chillies in half lengthways and peel the garlic. Step 3 Heat a large pan on medium-high heat. Toast 1-2 min (until fragrant): 3cm piece of Cinnamon, 1tsp Cumin Seeds, 1tsp Coriander Seeds, 1tsp Mustard Seeds, 4 Cloves, 2tsp Black Peppercorns Remove from pan and set aside. Step 4 Same pan char the Vegetables for an added smoky flavour (few minutes). Remove and set aside. Step 5 Same pan, on high heat, add 4-5 tbsp of Vegetable Oil and seer the Beef. While it cooks add to a food processor/blender: the Toasted Seeds, Charred Vegetables, 1tsp Turmeric, 1tsp Fenugreek, 1tsp Garam Masala, 1tsp Coriander, 1tsp Kashmiri Chilli Powder, Salt, 4-5 tbsp of vegetable oil and blend into curry paste. Add more oil if needed. Keep on eye on the beef. Step 6 Beef should be ready now. Reduce the heat to medium-low, remove the beef from pan and set aside. Add your curry paste to the pan in the leftover oil and beef juices and cook for a few minutes stirring occasionally. Add 2-3 tbsp tomato paste, stir and cook for another minute. Step 7 Return the beef to the pan and cover it with water. Bring to a boil then simmer on low heat with the lid on for 1-3 hours until tender (preferance and patience based). Stir occasionally and add a bit of water if needed. - RAITA SIMPLIFIED Ingredients: 1/2 Cucumber 200 grams Greek Yoghurt 1 Lemon Spices: Salt Step 1 Grate Cucumber and squeeze excess water. Step 2 In a bowl add the Cucumber, Greek Yoghurt and mix well. Add Salt and squeeze of Lemon juice to taste. P.S You can always add finely chopped mint or corriander, grated garlic or ginger and Garam Masala or a bit of extra virgin olive oil to further adjust the taste to your preference. - FLAT BREAD Ingredients: 200g Greek Yoghurt 2 tbsp Olive Oil 200g Plain Flour 2 tsp Baking powder Spices: 2 tsp Oregano 2 tsp Garlic Powder Salt Step 1 In a bowl mix well all the Ingredients and Spices with a spoon. Step 2 Switch to your hands and form your dough. Do this for a few minutes until you have a nice round dough and let it rest for 30 minutes. Step 3 Flour your surface, slice the dough in 4 pieces and roll them out. Step 4 Hot and dry pan, fry for about 1 minute on each side. - Quick Mango Chutney Ingredients: 1 Mango 1 Garlic Clove 1/2 inch Ginger 1 tbsp White Wine/Cider Vinegar 2-3 tbsp Brown Sugar Spices: 1/2 tsp Turmeric 1/2 tsp Garam Masala Sprinkle of Cumin Step 1 Dice the Garlic and Ginger. Rough cut your Mango. Step 2 Pan on medium-low heat. Toast the Garlic and Ginger with the Spices for 1-2 minutes until fragrant. Step 3 Add the Mango, Sugar, Vinegar and a bit of water. Mix well, bring to a rapid boil then simmer without lid for 15-25 minutes. Blend to desired texture and let cool.
