Beef Biriyani Recipe || Easy Biriyani Recipe for beginners || Beef Biriyani Kerala Style

A delicacy of India. Fragrant Basmati Rice mixed with a variety of spices and meat. This recipe is a must for any special occasion. Beef cooked in spicy masala gravy and layered with cooked rice. A very tasty and delicious biriyani.

Time : 1.5 Hour
Serves : 6

Ingredients:

For Beef
1. Beef- 1 kg
2. Oil/Butter - 2tbs (or use half & half)
3. Spices :
- Bay Leaves -2
- Cardamom -5
- Cinnamon
- Cloves-5
- Mace
- Star Anise-1
4. Onion - 3
5. Tomato -3
6. Ginger& garlic - 2 tbs
7. Green Chilli - 3-4
8. Coriander Powder -1.5 Tbs
9. Chilli Powder - 1.5 Tbs
10. Turmeric - 1/2 tsp
11. Garam Masala - 1/2 Tsp
12.Ground Fennel - 1 tsp
13. Ground pepper - 1/2 tsp
14. Mint leaves
15. Coriander Leaves
16. Yogurt -2 tbs

For Rice
1. Basmati Rice - 3 cups/750g
2. Water- 2 1/2 litre
3. Lime juice - 1 tsp
4. Butter - 1tsp
5. Salt

For Layering:
1. Coriander Leaves
2. Raisins - 2tbs
3. Cashews - 10-15
4. Lemon Juice - 2 tbs
5. Butter Melted 3-4 tsp
6. Garam masala -1 tsp
7. Fried Onion (1 Onion)
8. Turmeric 1/5 tsp (top layer, just for colour)
9. Rose water 1 tsp (top layer, optional)

Preparation :
* Preparing Beef
1. Add oil (oil&butter) to the pan and fry the onion until golden and set aside.
2. Add whole spices to the same oil and fry for 30 seconds over low heat.
3. Add in sliced onions and saute until its soft.
4. Add in the ginger & garlic paste along with green chilli and fry until the raw smell has gone completely.
5. Add the Spice powders (chilli, Coriander, turmeric and garam masala) and saute for a minute.
6. Add in the diced tomatoes and cook until soft.
7. Add 2 tbs yogurt and mix well.
8. Add Beef and salt , Cover and cook on a medium heat until the meat is completely cooked. Add 1/2 cup water if you need it(If it sticks to the bottom of the pan)

[If you prefer Pressure cooker/Slow cooker for cooking beef, feel free to do and follow the remaining steps as per the video]

* Cooking Biriyani Rice
1. Wash rice few times until the water runs clear. Drain the water.Keep it for 10 mins
2. Bring 8-10 cups of water to boil in a large pot.
3. When the water comes to a boil, add salt, lime juice, butter and rice.
4. Cook until its 80% cooked. Rice should be firm, grainy and you must feel the bite into the grain when you bite it. Drain it off to a colander.

* Preparing garnishes for layering
1. Chop some coriander leaves and keep aside
2. Squeeze a lime/lemon and keep the juice aside.
3. Keep ready some cashews and raisins if would like to add

* Preparing the Beef Dum Biriyani
1. Layer 1/3 of the rice evenly on top of the beef curry.
2. Sprinkle butter, fried onions, coriander leaves, garam masala, lemon juice, raisins and cashew.
3. Add the second layer of rice and repeat the process and then the remaining rice on top.
4. Sprinkle the turmeric and rose water on the top layer and add the other garnishes as well.
5. Cover the pot with the tight lid.
6. Turn on the heat to low.
7. Wait for the steam to come up . This may take nearly 15-20 mins.
8. Turn off the heat.
9. If you have time keep it closed for another half an hour.
10. Serve with some Raita, veggies, papad and pickle

Note:

While serving, mix the rice layers on the top first . To a serving plate take the some beef pieces along with the gravy and rice on top.
If you prefer to mix everything together , you can do that way
