* Carrot Ginger Soup *

- ( 500 g ) or 6 medium size carrots
- 20 g Ginger ( You can add more ginger if you like )
- 1 onion ( optional )
- 2 garlic cloves
- 720 ml vegetable broth
- 60 ml coconut milk
- 1/2 tbsp lemon juice
- Vegetable oil
- Garlic bread or rye bread

Instructions:

- Heat a large pot with oil. Add garlic, onion and ginger and sauté for 5 minutes
- Add carrots and sauté for another 3 minutes, stirring occasionally
- Pour in the vegetable broth, and let it simmer for 15 minutes
- Blend the soup until smooth.
- Add coconut milk
- Add more water if you like your soup to be thinner
- Add lemon juice, salt and pepper
Enjoy with garlic bread or any bread you like
