kabuli pulao is an Afghan dish, a variety of pilaf, consisting of steamed rice mixed with raisins, carrots, and lamb. It is one of the most popular dishes in Afghanistan and is considered the Afghan national dish. There are different ways of colouring the rice, lots of people caramelise sugar or there are healthier ways of using the lamb stock that is left or mixing Paprika powder with tomato paste to make that beautiful colour, which gives a better flavour to the dish.
