2 Easy Recipes For Beginners Part 2 / WFPBNO Basics

2 easy recipes for beginners, WFPBNO basics part 2 is what I will be sharing with you today. Today I will be showing 2 easy bowls to add to your recipe repertoire. The full recipes and all the links you need for anything that was mentioned in this video is below. Enjoy!!
TATER TOT BOWL (inspired by @brekkiebychomp)
2 cups defrosted hash browns*
1/4 tsp each salt, garlic powder, onion powder and smoked paprika
1 clove garlic chopped or minced
1-2 Tablespoons tapioca flour
6 mushrooms chopped
1 small onion chopped
1/2 green bell pepper chopped
1/2 orange or red bell pepper chopped
1/2 zucchini chopped
1 cup black beans
1/2 cup defrosted roasted corn.
1 Tablespoon cilantro chopped(optional)
avocado sliced about 4 slices (optional)
garlic salt
Add hash browns to a bowl and add the rest of the ingredients & mix.
Form the tater tots and place in your air fryer basket cooked @400 degrees for 15 minutes or longer if you want them crispier
*If you don't have frozen hash browns use pre cooked potatoes that have been in the fridge overnight. Then just grate them until you get 2 cups
For the veggies
Add mushrooms and onion to a dry non-stick pan and saute on medium heat until onions are soft about 5-6 minutes Add the garlic and saute for 30 seconds and add the rest of the veggies and season with garlic salt and cook for a few minutes. At the end add the cilantro. Add the veggies to a large bowl and add 5 tater tots and add avocado on top.

RISOTTO BOWL
1 1/2 cups Arborio rice (do not rinse!)
4 cups hot veggie broth (keep in going on a low heat)
1/2 onion chopped
3/4 cup defrosted roasted corn
1-2 Tablespoons chopped flat leaf parsley
1/2 cup chickpeas
2 cups steamed broccoli
1/2 cup chopped cherry tomatoes
ranch dressing *
Add 1/4 cup water to a non stick skillet heat, medium heat
Add the onions and cook until soft. Add the rice and make sure each grain gets coated with the moisture from the onions.
Add 2 ladles of hot veggie broth. Mix it into the rice as shown in the video. Once all the moisture has been absorbed add another ladle full of broth and repeat the process. Keep it on medium heat. You don't want it to boil, if it does turn the heat down. This is a slow process and you don't want to rush it. When you are down to your last ladle and 1/2 of broth add the corn and parsley until moisture is absorbed. Check you rice before you add corn and parsley. If it's not done, heat up more broth and continue the process until it is done.
Add the rest of the ingredients to a large bowl and top with Ranch dressing. Recipe below:

PLANTIFUL KIKI'S RANCH DRESSING
1/2 cup canned white beans
1/2 cup plain unsweetened soy milk
1 1/2 T white vinegar
1/2 tsp garlic powder
1/4 tsp onion powder
1 tsp dried parsley
pinch of dill
Place all ingredients except parsley and dill and blend in a small blender till smooth then stir in parley and dill. Set aside
