Cut the chicken breast in half and place into marinade. Marinade for up to 24 hours or use immediately. In a separate bowl, combine the flour, corn starch, and required spices until well mixed. Add a few drops of the buttermilk marinade to the flour mixture and combine well. Set aside. While chicken marinades, prepare your spicy mayo. Combine the mayonnaise, honey, hot sauce, and required spices. Mix until well combined and adjust measurements if needed. Place a cast iron skillet on stove and heat about 1 inch of oil in skillet until temperature reaches 350ºF. Place your chicken into flour dredge and press down on chicken to make sure flour completely coats all sides of chicken. Shake any excess chicken off and gently place the chicken into the fryer. Fry chicken on both sides for 3-5 minutes until golden brown and the internal temperature reaches 165ºF. Remove chicken from fryer, and place onto a wire rack to cool. In the meantime, butter and toast the brioche buns. Assembly time!!! Slather both sides of the buns with the spicy mayo. Place the pickle chips on the bottom half of the bun, followed by the chicken, and then the top bun. Serve & Enjoy :) |
