Super quick meal prep using leftovers & a few pantry staples! 🌱 Today we're preparing a few meals inspired by what we already have in the fridge, freezer and pantry. All the meals are healthy, vegan, oil-free and have whole food plant based (WFPB) options. Hopefully this will give you some good ideas for a prep to do when you're short on time. Enjoy! Ceylon cinnamon 1/2 cup soymilk (or any other plant milk you like) Top with: bananas, nuts, flax, chia, etc. 🔺 Green Curry 1 onion 2 cloves garlic 3 TBL green curry paste 5-6 kaffir lime leaves (optional) 1 stalk lemongrass (optional) 12 cups vegetable broth* (or water + Better than Bouillon paste) 3-4 cups veggies of choice + 2 handfuls of spinach 1 can coconut milk (use 1/2 can if watching fat intake) Optional: tofu puffs, regular tofu cubes, tempeh, etc. *Use less broth (& therefore less curry paste) if making a thick curry instead of soup 🔺 Chocolate Orange Pudding (based on this recipe! https://www.youtube.com/watch?v=EtGgsLEECCE&t=161s) 2-3 sweet potatoes (previously baked at 400F for 45 min) 2 TBL cocoa or cacao powder 1/3 cup maple syrup 1/4-1/2 cup orange juice (taste as you go) + 1 tsp. orange zest (forgot to add this in the vid, but it will boost the orange flavor!) If too thick, add some soymilk to thin 🔺 Avocado Basil Dressing 2 cups fresh basil 1 avocado 1-2 cloves garlic 2 TBL nutritional yeast 2 TBL lemon juice 1/8 cup pinenuts (or roasted cashews since it was all I had!) 1 1/2 cups water Blend until smooth.
