6-8 chicken thighs (boneless skinless) 1/2 of a Lemon juice 1 tsp Ground coriander 1 tsp Paprika 1 tsp Oregano 1 tsp Dried dill 1/2 tsp Garlic powder 2 garlic cloves 1 tbsp Olive oil Salt & pepper 1 yellow onion 1.5 cups Jasmine rice 1/8 tsp Turmeric 2 Cardamom pods 1 cinnamon stick Salt & pepper 3 cups Water Handful Fresh parsley 2 tbsp Butter Greek salad: Green bell pepper Cucumber Red onion Feta cheese Cherry tomato Dressing: 2 tbsp Olive oil 2-3 tbsp Lemon juice 1/2 tsp Oregano 1 garlic clove (grated) Salt Sauce: 1/2 cup mayo 1/4 lemon juice 1 tbsp fresh parsley 1/4 tsp Garlic powder

2. Greek Chicken Souvlaki Wrap
Ingredients
For the chicken souvlaki:
1.5-2 lbs chicken breasts 2-4 chicken breasts
1/2 cup plain Greek yogurt
1 lemon, juiced + more slices for serving
4 garlic cloves, minced
4 tbsp extra virgin olive oil
2 tsp dried oregano
2 tsp dried thyme
1 tsp paprika
1 tsp salt
1/2 tsp pepper

F| 21g Ingredients for 3 portions: - 3 medium chicken breasts ( 120g ) - Baby potatoes ( 250g per portion ) - self-raising flour 30g - spinach - 3 tsp. olive oil - 1/2 onion - Broccoli added at the end Seasonings: Garlic, paprika, salt, pepper, mixed herbs, and parsley Sauce: - Double cream 80ml - water/vegetable stock (preferably chicken but veg works too) - 30g grated mozzarella Seasonings: salt, pepper, mixed herbs, parsley

3 russet potatoes skin-on
2 tbsp olive oil
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
4 garlic cloves
1/2 lemon, zested and juiced
4 oz feta
2 tbsp fresh parsley.

5. Extra cheesy eggplant parm
Ingredients
3 medium eggplants sliced into 1/4 thick rounds
1 tsp kosher salt
1 cup all-purpose flour
1 tsp kosher salt
1/2 tsp black pepper
2 eggs lightly beaten
1 cup panko
1 cup Italian-style breadcrumbs
1 tsp garlic powder
2 cups marinara sauce
8 oz fresh mozzarella sliced into rounds
1/2 cup fresh basil chiffonade
1/2 cup parmesan grated

6. Roasted Greek Vegetables (Briam)
Ingredients
3 Yukon gold potatoes sliced into 1/8-inch thick rounds
3 zucchinis sliced into 1/4 inch thick rounds
1 eggplant sliced into 1/4-inch thick rounds
1 red onion sliced into 1/4-inch thick rounds
5 garlic cloves minced
2 tbsp fresh parsley chopped
2 tbsp extra virgin olive oil
1 tsp salt
1/2 tsp black pepper
2 tsp dried oregano
28 oz diced tomatoes
2 tbsp extra virgin olive oil
2 tbsp fresh parsley chopped

7. Creamy Potatoes Au Gratin
Ingredients
2.5 lbs Yukon gold potatoes (5-6 potatoes)
2 cups gruyere cheese, shredded.
2 cups sharp cheddar cheese, shredded.
4 tbsp butter
5-6 garlic cloves, minced.
1/2 yellow onion, diced.
1/4 cup flour
1.5 cups milk
1 tsp salt
1/2 tsp pepper
1/8 tsp nutmeg
1.5 tbsp fresh chives, chopped.

8. Ispanaklı Yumurta (Spinach and Eggs)
Ingredients
300 grams of spinach washed, stems removed & roughly chopped
4 eggs village or free range
1 large onion peeled & finely chopped
1 dessertspoonful tomato paste tomato paste
1 teaspoon sweet paprika
1 teaspoon chilli flakes
1 tablespoon olive oil for frying, salt & pepper to season

9. Roasted red pepper & herb chicken & potatoes
Recipe: 7-8 Chicken thighs (bone-in)
1 tbsp Ghee
1 tbsp olive oil
1 tbsp Roasted red pepper paste
6-8 garlic cloves
1 tsp coriander (ground)
1/2 tsp Paprika
1/2 tsp Fresh thyme
2 tbsp fresh dill
1 tbsp fresh parsley
1/2 of a Lemon juice
Salt & pepper
Potatoes:
1 lb. Baby potatoes
1-2 tbsp Avocado oil
Salt *Bake at 425 degrees f for 25-30 minutes- flip chicken and bake for another 25-30 minutes or until skin is crispy and golden.

10. Kafta bil Sayneyeh - One pan meals
Recipe ⬇️
1 lb Ground beef
1/2 Spanish onion
1/2 stalk Fresh parsley
1 tsp 7-spice
1/4 tsp Cinnamon
1/4 tsp Salt & pepper
2-3 tbsp ghee
2 yellow potatoes
3 tbsp Tomato paste
2 Garlic cloves
1/2 Chicken bullion cube
2.5-3 cups Water
1 beefsteak tomato
shishito peppers
Pita bread *Simmer on medium-low heat for approx. 15 minutes then bake at 400 degrees f for 20-25 minutes
