Chocolate orange porridge for your weekday #veganuary breakfast

This easy breakfast recipe is vegan, gluten-free and low FODMAP and is featured in more detail in my IBS sufferer eats the Daily Dozen video, coming soon.

Recipe for 2 servings

Peel and segment two medium mandarins, removing as much pith and sinew as you can before chopping each segment into small chunks.

To a pot add 60g or ¾ cup of rolled oats, the mandarin segments, 3 Tbsp of desiccated coconut, 1 tablespoon of ground flaxseed, 1 tablespoon of cacao powder, ½ a teaspoon of mixed spice and 1.5 cups of almond milk.

Simmer on medium heat for 6-8 minutes until thickened to your liking.

Add an optional drizzle of milk and if you have a sweet tooth like me a small glug of maple syrup.

Enjoy!

The low FODMAP portion of oats is up to 60g of uncooked oats per serving. I can't eat that many oats but feel free to increase the portion size according to your appetite. If you're not eating a low FODMAP diet feel free to increase the serving size of oats and fruit to suit your appetite and tolerance.
