If there's one country in the world that we spontaneously link to gastronomy and great food, it's France. The French contestant at the European finals in Brussels has a great responsibility: he must represent the long culinary French tradition as well as prove that the new generation of chefs are innovators and risk takers.

As opposed to the first years of the Bocuse d'Or, France doesn't systematically end up on the podium of the international finals. The technical and imaginative differences in between countries has been erased. Today we see great new gastronomical countries such as Sweden, Japan or even the United States. Now they all compete at the same level.

For France to end up at the world finals in January, the contestant at the 2012 selection will have to be extraordinarily motivated and talented. Let's discover which candidate will defend France's culinary identity in Brussels and, hopefully, in Lyon.
